What’s with this weather!? Doing my weekly meal planning is so tricky when I don’t know whether we’re going to freeze or boil. It was so hot one night last week that I didn’t dare turn the oven on and bought sushi instead.
So I’m hedging my bets with our family meals for the week with a few dishes that can be grilled outdoors.
Here’s what’s on the menu:
Monday: Rustic beef short ribs with mustard sauce
The meat melts off the bone when the ribs are slow-cooked, which is perfect for my youngest who hates the merest hint of gristle.
Tuesday: Thai-style grilled chicken thighs
It’s taken a while, but my kids are finally developing a taste for Thai flavours (hurrah!). I’ll probably leave the chilli out of the marinade for them.
Wednesday: Beef & bean chili verde
Chile Verde, usually a slow-cooked stew of pork, jalapenos and tomatillos, becomes an easy Aussie weeknight meal with quick-cooking beef mince and store-bought green salsa. Serve with rice, fresh coriander, red onion and grated cheese. Add cornbread on the side and your favourite hot sauce.
Thursday: Indonesian chicken & noodle casserole
Noodles, chicken, sweet soy … what’s not to like? Again, keep the chilli on the side if your kids are averse.
Friday: Beer can chicken
My sister cooked this dish recently and raved about it. I think it sounds perfect for a Friday night barbie.
