5 kid friendly dinners: Barbeque, chicken wings and noodles

 

Gosh, how hot is it? I can’t quite describe what it’s like to have to deal with children in extreme heat, the kind of heat you can’t even play in. It’s all about cold drinks, ice blocks and light meals.

My daughter, who hasn’t napped in years, has been falling asleep on the lounge room floor. I’ve been having to wake her up for dinner and she and her brothers don’t have their usual appetites. They want something light on a hot day, and lots of watermelon.

Here are 5 kid friendly dinners that are the perfect end to a scorching hot day.

Monday: Chicken sandwiches and fruit

One of our favourite hot day dinners is beautiful, filling sandwiches and a large plate of watermelon slices. The great thing about these sandwiches is that they are so healthy and satisfying. On a hot day my children normally play in the sprinkler ahead of dinner and eat it wrapped in towels.

Tuesday: Fish with noodles

Hot days normally leave a craving for fish and chips with lemon wedges. This is a delicious variation that is much healthier. Kids love fish and they love noodles. Just make sure they don’t accidentally squirt themselves in the face with the lime wedge. This is a refreshing end to a summer day.

Wednesday: Barbeque steak

Picture this…the heat fading, you in shorts and thongs, barbeque on, salads, fruit. This is the perfect hot day dinner and what child doesn’t love a barbeque. The summer salsa adds a tasty twist. Sometime salsa doesn’t need corn chips!

Gosh I love chicken wings, and thankfully so do my children. We have become a bit obsessed with them. They are so affordable and there are so many ways you can make them. School holidays and hot days mean foods you can eat with your fingers and for this, chicken wings are perfect.

Friday: Cajun chicken and sweet potato salad

I’m doing Michelle Bridges 12WBT at the moment and this recipe has become one of our favourites to share for dinner. It’s so easy and delicious and healthy. It uses left over cajun chicken so there is hardly any cooking required. Brilliant.
