This slow-cooker chilli turns one meal into two (with zero extra effort).

Not to brag, but I'm really good at being lazy.

This 2-for-1 Chilli Con Carne is the perfect example of how I turn "adult" food into a family meal with minimal effort. Ain't nobody got time to prepare two separate meals every night.

This dish takes no time to prep — your slow cooker does all the heavy lifting.

Set and Forget Family Chilli/Nachos.

Ingredients:

For the Chilli

Olive Oil

½ onion chopped

2 cloves garlic/jarlic

1 cup finely chopped grated veggies (i used zucchini and carrot)

800 g minced or casserole beef 

Taco/Chilli Seasoning (I used Mingle Chilli Con Carne sachet)

1 400 g can Mexi beans

1 400 g can crushed tomatoes

½ cup chicken stock

1 tbsp tomato paste

To serve

Steamed rice

Sour cream

Corn chips

Jalepenos

Parsley or spring onions

Grated cheddar

Method:

In your slow cooker, add olive oil, onion, garlic, veggies, beef and seasoning. If your slow cooker has a saute function, fry this mix for 5 mins until fragrant before adding the remaining ingredients.

Add Mexi beans, tomatoes, tomato paste and stock. Stir and slow cook on low for as long as you can (4-6 hours is ideal).

When your slow cooked Chilli is nearly done, cook your rice and prepare your toppings.

For the adults, I serve the Chilli over Rice with jalapenos, cheese, sour cream, spring onions, and crushed corn chips.

For the kids, I make nachos by topping corn chips with the chilli, adding cheese and sour cream if I'm feeling lucky.
