A no-fuss, chuck-it-all-in-one-tray kind of dinner.
Perfect for busy nights when you want something filling, flexible and low on washing up.
Adjust the quantities based on the size of your tray and how many mouths you're feeding.
The easiest tray bake dinner.

Prep time: 10-15 minutes
Cook time: 40-50 minutes
Ingredients:
Quantities are flexible — use what you have.
- Sausages
- Potatoes, diced
- Carrots, diced
- Corn on the cob, cut into thirds
- Broccoli, cut into florets
- Olive oil
- Salt
Method:
- Preheat the oven to 200° C. Line a large tray with baking paper or lightly grease it.
- Dice all the vegetables into roughly even-sized pieces and spread them out on the tray.
- Add the sausages, spacing everything out so it roasts rather than steams.
- Drizzle everything generously with olive oil and sprinkle with salt. Toss everything to coat evenly.
- Bake for 40-50 minutes, turning once halfway through, until the potatoes are cooked through and golden.
- Serve straight from the tray.
Tips:
- Add herbs, garlic, paprika or mustard if you want extra flavour.
- Swap veggies depending on what's in the fridge — pumpkin, onion, capsicum or zucchini all work well.
- For crispier sausages, place them on top of the veggies rather than underneath.
