'I'm a carb loyalist, but these protein brekkie tacos changed me.'

I'm a card-carrying carb lover, but these protein brekkie tacos may convert me to the dark side.

These tacos are super nutritious and hit your protein goals — all without sacrificing an ounce of flavour.

Protein-Packed Brekkie Tacos.

Ingredients:

For the frittata

6 eggs

1 cup cottage cheese

¼ cup Parmesan cheese, grated

¼ cup spring onion, thinly sliced

Salt and pepper (I also use Mingle Meat All Rounder Seasoning)

2 tbsp milk

For the tacos

8 mini tortillas

Bacon rashers, fried

Spinach

Tomatoes, chopped

Pickled onion

Hot sauce

Mayo

Method:

Preheat the oven to 180 degrees Celsius.

To make the frittata, combine eggs, cottage cheese, Parmesan, spring onion, milk and seasoning in a bowl and whisk until combined. Then, pour into a lined baking tin.

Bake (or air fry) for 15–20 minutes, or until eggs are cooked through.

Once cooked, cut into portions — you should get 8–10 portions from this recipe.

To assemble your tacos, spread mayo over your tortillas, add spinach, frittata, tomatoes, bacon, pickled onion and top with your hot sauce of choice.
