If you're not making one-tray dinners, this Greek-inspired lamb bake will convert you.

If you're not incorporating one tray Wonder meals in your kitchen repertoire, then you're missing out.

They're simple, quick, low fuss, low mess and a great way to purge the fridge of tired ingredients.

This Greek-ish lamb bake came together in under 35 mins and was delicious and healthy.

And most importantly? It left minimal clean up.

Greek-ish One tray Wonder.

Serves: 4

Cook time: 35 minutes.

Ingredients:

8 lamb chops

2 large potatoes

1 red capsicum

1 yellow capsicum

1 zucchini

1 punnet cherry tomatoes

1 red onion

2 cloves garlic crushed

Olive oil

Fresh or dried greekish herbs like:

Thyme, dill, oregano, sumac, marjoram, mint

1 lemon

Salt and pepper

½ cup feta cheese

Method:

Preheat oven to 200 c

Rustically chop your veg and toss into your pan.

(Note: this is the perfect opportunity to get rid of any dubious veg in your fridge so chuck in whatever you have!)

Add a generous drizzle of olive oil (at least 2 tbsp)

Add a crushed garlic clove, your dried/fresh herbs, salt, pepper and some sliced lemon (reserving ½ for serving)

Bake in the oven for 15-20 mins or until the veg looks nearly done.

Toss your lamb chops in crushed garlic, dried herbs, oil, salt and pepper.

Take your nearly cooked veg out of the oven and add your lamb on top.

Cook for a further 10 mins until veggies and lamb are cooked through.

Crumble over the feta, squeeze over  the remaining lemon and add some extra fresh herbs if you have them.

Serve with tzatziki and couscous if you want to level up a notch!
