Let's be honest, cooking every night is a lot of work. Between juggling deadlines, meetings, and trying to maintain some semblance of a social life, the last thing I want to do is spend hours in the kitchen preparing elaborate meals.

So, I'm constantly on the hunt for simple recipes that can be whipped together easily, taste amazing, fill me up, and ideally, pack in protein while keeping carbs in check.

When I first spotted the lasagne soup trend taking over my TikTok feed, I was instantly intrigued.

The videos made it look so easy — one pot, minimal prep, maximum flavour. My kind of recipe.

As someone who loves traditional lasagne but not the time commitment (or the carb overload), this seemed like the perfect solution. Plus, I'm gluten-free (coeliac) and all the ingredients were naturally ok for me, all I had to do was swap out the pasta. It really doesn't get easier than that.

What really caught my attention was how customisable it looked. Some creators were loading theirs with veggies, others were going heavy on the protein, and all of them were raving about how it captured that comforting lasagne flavour without the fuss of layering and baking.

I've successfully hidden zucchini, spinach, bell peppers, and even grated carrots in mine with zero complaints from picky eaters.

How to make the viral Lasagne Soup.

Ingredients:

  • 1 tbsp olive oil

  • 500g lean mince beef (or turkey for an even leaner option)

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 1 litre chicken or beef stock

  • 400g passata or tomato sauce

  • 1 tbsp tomato paste

  • 50g lasagne sheets, broken into small pieces

  • 1 bag of spinach (optional)

  • 1 carrot, grated (optional)

  • Fresh basil (optional)

  • Salt and pepper to taste

  • Grated cheese, ratio to your taste

  • 100g ricotta, cottage cheese or tzatziki

Method:

  1. Heat oil in a large pot over medium-high heat.

  1. Add onion and garlic, cooking until softened (about 3-4 minutes).

  1. Add mince and cook until browned, breaking it up as it cooks.

  1. Stir in carrots if using, tomato paste, passata, basil, and stock.

  1. Bring to a simmer.

  1. Add broken lasagne pieces and cook for about 8-10 minutes until the pasta is al dente.

  1. Stir in spinach if using, and let it wilt.

  1. Stir in your cheese of choice, at a ratio if your choosing. I did around 80-100 g.

  1. Season with salt and pepper to taste.

  1. Serve hot with a dollop of ricotta, cottage cheese or tzatziki, a sprinkle of cheese, and fresh basil.

Tips and tricks:

For extra protein, use a bone broth instead of stock

Add a dash of cream at the end for richness

The soup thickens as it sits, so add more stock when reheating leftovers

To make it lower carb, reduce pasta and add more vegetables

This soup truly delivers the comforting flavours of lasagne without the guilt or food coma that follows. The familiar Italian seasonings, the rich tomato base, and that perfect cheese finish give you all the satisfaction of the original dish in a much lighter format.

I personally used tzatziki to top my lasagne soup which was really fresh and tangy (I tried to get cottage cheese but it's newfound popularity means it was sold out).
