Jamie Oliver shares his 3 favourite (and hassle-free) air fryer recipes.

I have (finally) jumped on the air fryer bandwagon. But I am finding I am only using it for nuggets, hashbrowns and well, not really the 'healthy' options I had imagined (not that my kids are complaining). 

And then I discovered that the OG legend of all things healthy, delicious and easy, Jamie Oliver, is an air fryer man. Of course he is. So much so, he has a recipe cookbook 'Easy Air Fryer' that I can share three recipes from. How good!

Jamie Oliver's air fryer recipes.

1. Fragrant Chicken in a bag.

Serves: 4

Prep and cook time: 35 minutes

What you need:

1 nest of vermicelli rice noodles (45g)

12 lime leaves

8cm piece of ginger

2 cloves of garlic

1 stick of lemongrass

1½ fresh red chillies

1 bunch of coriander (30g)

4 tbsp low-salt soy sauce

sesame oil

1 x 150g skinless free-range chicken breast

1 pak choi

80g sugar snap peas

80g baby corn

2 spring onions

1 tbsp unsalted roasted peanuts

½ a lime

What you do:

  1. In a bowl, cover the noodles with boiling kettle water and leave to soften for a few moments, then drain and refresh under cold running water.

  1. Tear the lime leaves into a small food processor, discarding any tough stalks. Peel, roughly chop and add the ginger and garlic, chop and add the lemongrass and 1 chilli, most of the coriander, stalks and all (reserving a few nice leaves), and a pinch of sea salt. Add the soy and 1 teaspoon of sesame oil and blitz into a paste. Divide the paste into four, keeping one portion for now and freezing the rest for future meals.

  1. Score deeply into the chicken a few times at an angle and rub with half the paste portion. Halve the pak choi, sugar snaps and baby corn, trim and finely slice the spring onions, then toss it all with the remaining half-portion of paste.

  1. Tear off a large sheet of thick tin foil (about 60cm long), fold it in half, then open it out like a book and rub one side with sesame oil. Top with the noodles and veg. Finely slice and scatter over the remaining chilli, then sit the chicken on top. Fold over the foil to create a parcel, twisting the edges to seal, and add 50ml of water before sealing the final side. Place in the air-fryer drawer and cook for 25 minutes at 200ºC, or until the chicken is cooked through.

  1. Remove the bag to a serving plate and carefully tear open the foil. crush over the nuts, scatter over the coriander leaves and finish with a squeeze of lime.

2. Prosciutto Baked Fish & Garlicky Beans

Serves: 2

Prep and cook time: 25 minutes

What you need:

2 cloves of garlic

4 sprigs of rosemary

20g blanched almonds

40g sun-dried tomatoes in oil

20g Parmesan cheese

2 x 130g white fish fillets, skin off, pin-boned

4 slices of prosciutto or parma ham

½ a lemon

1 x 400g tin of white beans

160g baby spinach

What you do:

  1. Peel and finely slice the garlic, pick and finely chop 2 sprigs of rosemary, then remove the shelf from the small air-fryer drawer and scatter it all into the base. Drizzle in 1 tablespoon of olive oil, then cook for 5 minutes at 200ºC, or until the garlic is lightly golden.

  1. Meanwhile, bash the almonds and sun-dried tomatoes in a pestle and mortar with ½ a tablespoon of oil from the tomato jar and a few gratings of Parmesan until you have a thick paste, then spoon over the fish. Drape 2 slices of prosciutto or Parma ham over each fillet, also tucking in a rosemary sprig. Drizzle with ½ a tablespoon of oil from the tomato jar and place in the large drawer, then cut the lemon half into wedges and place alongside. Cook for 10 minutes at 200ºC, or until cooked through.

  1. Stir the beans and half their juice into the small drawer with 1 tablespoon of red wine vinegar and cook for 10 minutes at 200ºC, or until piping hot, then season to perfection, and divide between plates.

  1. Sit the fish on top of the beans. Pack the spinach into the large drawer, season, and cook for 2 minutes at 200ºC, or until just wilted, then drizzle with a little extra virgin olive oil, and serve alongside the fish. Finely grate over the remaining Parmesan, and serve with the jammy lemon wedges.

3. Mushroom Swirls

Serves: 8

Prep and cook time: 30 minutes

What you need:

150g chestnut mushrooms

olive oil spray

1 clove of garlic

1⁄2 x 320g sheet of ready-rolled puff pastry

1 free-range egg

smoked paprika

25g Cheddar cheese

1⁄2 a bunch of chives (10g)

2 tbsp soured cream

What you do:

  1. Trim the mushrooms, quartering any larger ones, place in the small air-fryerdrawer, spritz with olive oil, toss to coat, and cook for 10 minutes at 180oC. Peeland finely slice the garlic, add to the drawer and cook for another 10 minutes at180oC, or until soft and golden.

  1. Unroll the pastry sheet on its paper. Beat the egg and brush all over the surface,sprinkle with a light dusting of paprika and a pinch of sea salt and black pepper,and finely grate over the cheese. Use the paper to help you roll the pastry upfrom one of the shorter ends into a log.

  1. Cut into 8 equal-sized rounds, turn them on to their cut sides and use the palm ofyour hand to flatten them into 6cm-wide discs, then eggwash the tops. Spritz theshelf in the large drawer with oil, evenly space in the pastry swirls and cook for 10minutes at 200oC, or until beautifully golden.

  1. Finely chop the chives. Remove the cooked mushrooms and garlic to your board,add most of the chives, then finely chop it all together, mixing as you go. Stir inthe soured cream, then season to perfection. Spoon the mushroom mixture on tothe pastry swirls, and serve sprinkled with the remaining chives.

Easy swaps:

Drizzle Marmite over the pastry instead of dusting with paprika, for a classic cheese andMarmite combo – it works surprisingly well with the mushrooms.
