The easiest hidden-veg pasta sauce for picky eaters (and kids love it).

When my kids ask for "plain pasta with sauce", this is my go-to dinner.

It tastes simple enough for them, but it's loaded with veggies and protein, so I still feel like I've done my job.

It's a low-effort dinner that always has my kids asking for seconds.

Creamy Pasta with Hidden Veg.

Serves: 5

Prep time: 15 minutes

Cook time: 35 minutes

Ingredients:

(Note: you really can use almost any veggies for these, but these are my go-tos!)

1 zucchini, chopped

1 onion, chopped

1 small sweet potato

4–5 tomatoes

A generous dash of olive oil

Salt and pepper, to taste

Dried Italian herbs

1 block of silken tofu

Pasta of your choice

Optional: cottage cheese

Method:

Preheat the oven to 200°C, fan-forced.

Pour olive oil onto a baking tray and spread veggies in an even layer.

Season with salt, pepper and Italian herbs and toss to coat.

Roast for 25–30 minutes, or until the vegetables are soft.

While the veggies cook, prepare pasta as per the packet instructions.

Once cooled, add veggies to a blender with silken tofu (and cottage cheese if using) and blend until smooth and creamy.

Pour the blended sauce over the pasta and serve!
