This 'lazy' vegetarian stir-fry is perfect for busy weeknights.

This is my bare minimum dinner for the nights when I'm this close to ordering take out but still want something healthy-ish that the kids will happily eat.

This doesn't involve real cooking — just assembling all of the ingredients together in a pan.

Lazy "No-Cook" Vegetarian Stir Fry.

Serves: 4-5

Prep time: 5 minutes

Ingredients:

1 bag frozen stir-fry vegetable mix

2 packets buckwheat soba noodles (or any instant stir-fry noodles)

1 cup textures vegetable protein (TVP). If you're not vegetarian, you can swap this out for regular mine or even a roast chook

Hoisin sauce, to taste

Oil for frying

Method:

Thaw the frozen vegetables slightly in the microwave.

Heat the oil in the pan and add veggies.

Once the veggies are ready, add in the soba noodles.

Place the TVP in a bowl and cover with hot water. Let sit for 2-3 minutes until softened, then drain.

Toss the veggies, noodles and rehydrated TVP together.

Add the hoisin sauce and mix until everything is evenly coated.
