If you’ve been spending a bit more time at home lately (anyone?) you might have started to get bored of the same old recipes from your repertoire.

In times like these, we just want to go back to basics from our local food shops: Bread, milk, TOILET PAPER, flour, fruit and veg, and of course, eggs.

Eggs are such a versatile, budget-friendly staple to keep in the fridge. They’re one of nature’s perfect protein sources.

But far from being breakfast-only fare, they’re actually ideal for anytime of the day. My kids love nothing more than dunking their toast soldiers into a gooey soft-boiled egg, but eggs can do so much more.

So think outside of the box (egg carton?!) and try your hand at some of these too-easy recipes that literally anybody can make at home (with inspiration provided by Australian Eggs).

A lot of these are kid-friendly too, so it’s a good way to keep them occupied (and fed!) during our current indoor-bound times. Enjoy.

1) Warming Curry.

Replace your typical protein in your favourite curry with boiled eggs. It’s a great way to enjoy a meat-free meal and save your pennies for hand sanitiser.

2) Date loaf.

There is nothing better than the smell of a sweet loaf fresh out of the oven. Eggs add the richness to baked goods that you just don’t get from other ingredients.

Try this recipe that I prepared with my six year old as part of our home school lesson (maths and science rolled into one delicious project). It’s a one-bowl wonder.

3) Buddha bowl.

Whack a boiled egg into your Buddha bowl for a delicious protein kick that takes no time at all. Boil up half a dozen at a time and keep them in their shell in the fridge to add to salads and sandwiches.

4) The fluffiest pancakes.

Pancakes are the ultimate crowd-pleaser and you can’t make pancakes without the humble egg! This recipe shows you exactly how to make the perfect, fluffy pancake, ready to be drizzled with maple syrup.

5) Eggy slice.

You can’t beat a quick and easy egg-based slice to see you through for a week of lunches. Served cold on the go, or warmed up with a side salad, it’s packed with veggies and topped with cheese for that extra yum-factor.

6) Portuguese custard tarts.

Had I realised just how easy these are to make, I would not have spent quite so much of my hard-earned cash at the local café for all these years. Alas, my favourite café has closed for now, but I’m so happy to know that these little beauties are available to me anytime. Providing there's enough cornflour at the supermarket...

7) Fried rice.

Make the most of that leftover rice to prepare a simple dish that will fill hungry bellies. Add whatever veggies you have on hand to bulk this out and add more fibre.

The egg brings it all together for that creamy finish that you love. If you’re a fan of heat, add some sriracha before serving.

8) Make-ahead French toast.

Get these on the go the night before to give the bread a chance to soak up the eggy goodness overnight. Then in the morning they just need to go in the oven for 35 minutes.

By the time you have a shower and get the coffee on, they’ll be ready to serve up.

9) Five-ingredient Carbonara pasta.

That’s right, the main ingredient in a good carbonara is eggs, not cream. This dish just screams comfort food, which is what we all need more of at the moment – am I right? This one manages to come in at just five main ingredients. Winning.

10) Easy egg muffins, three ways.

They're for breakfast, they're for snack time, they're for any time. These simple egg muffins need just eggs, milk and a sprinkling of flour.

From there you can use whatever fillings you have on hand, like feta and tomatoes; mixed veggies and cheddar cheese; or a zucchini, corn and mozzarella combo.

11) Snuggly baked custard.

There is nothing like presenting your nearest and dearest with a homemade dessert to get you all feeling warm and fuzzy. Baked custard, made with just five ingredients, could be just the ticket for a moreish dessert this week.

12) Filo pastry pie.

We had you at pie, didn’t we? Anything wrapped in filo pastry is pretty amazing, but this spinach and cheese pie is next level. With eight eggs, this is sure to fill up even the hungriest of your people.

While it’s nice on the day you make it, it also keeps well in the fridge if there are any leftovers.

13) Breakfast (or any time) pizza.

Who says pizza can’t be for breakfast? These bad boys will be inhaled in no time, and take just 15 minutes to bake. Customise to your heart’s content depending on what you have available at home.

14) Five-ingredient chocolate souffle.

With just a handful of main ingredients, soufflé has officially come out of the too-hard basket and onto the dinner table. Use the best quality chocolate you can afford, which will take this dessert to another level. Don’t forget the vanilla ice cream to serve with it.
