Ingredients:

1 broccoli stem, grated

1 onion, finely diced or grated

2 handfuls of shredded cheese

Salt and pepper, to taste

1 tsp minced garlic

2-3 Weetbix, crushed

2 eggs

A dash of milk (just enough to bring the mixture together)

Oil, for frying

Method:

Grate the broccoli stem and place it in a mixing bowl.

Add the onion, cheese, salt, pepper, and garlic.

MIx in the crushed Weetbix, eggs, and a splash of milk. Stir until everything combines into a batter. Add a little more milk if it feels too dry, or more crushed Weetbix if it's too wet.

Heat oil in a pan.

Scoop spoonfuls of the mixture into the hot pan, flattening them slightly.

Fry for a few minutes on each side, until crispy and golden.
