These viral Dump and Bake Curry noodles are phenomenal and worth the hype.

So easy, made with fridge and pantry staples and ready in less than 15 mins. I mean, say less. 

Dump and Bake Curry Noodles.

Serves: 2

Cook time: Less than 15 minutes.

Ingredients:

2 packets instant ramen (Indomie Mee Goreng is my go to)

4-6 frozen pork or veggie dumplings 

1 tbsp store bought curry paste

1 cup whatever veggies you have in the fridge thinly sliced (I used broccolini and cabbage)

½ cup coconut milk 

1 ½ - 2 cups boiling water or stock

Everything Bagel seasoning

1 spring onion, thinly sliced 

Chilli oil

Method:

Preheat oven to 180 (if using oven).

In a medium sized baking dish, add your instant ramen noodles and flavour sachets.

Add frozen dumplings, curry paste, coconut milk, veggies and stock.

Give it all a good stir to disperse the curry paste, then cover with tin foil and bake or airfry for 10 -15 mins.

(Note: Cook time will depend on how hot the liquid you add is.)

Once the ramen and dumplings are cooked through, sprinkle with Everything Bagel seasoning, drizzle with chilli oil and add chopped spring onions to serve.
